Why Happy Hollows Spring Water?

I have been spoiled until recently with fluoride free city water here in Hot Springs National Park, Arkansas where I live. Unfortunately, that is about to end. Act 197 is about to be enacted in Hot Springs.
"Act 197 of 2011 currently requires any water system in the state serving 5,000 people or more to set a fluoride level within the minimum and maximum levels recommended by the Health Department. So much time has passed many of us in town now are seemingly caught unaware because we don't attend the government hearings each month, but it is now upon us. Starting January 1st there will be fluoride added to our city water.

Here in Hot Springs, residents and visitors alike have a very special amenity available to us. Free water is available to anyone  who wants to go downtown to one of the several springs publicly available and fill up a jug or bottle. I first started getting the free spring water years ago before I ever lived in Hot Springs. Friends of mine and I would make a pilgrimage once a month or so with milk crates full of old gallon milk jugs and fill up with the free water. Back then I just thought it was cool. Or rather hot, since the water coming from most of the springs is HOT spring water.

After I moved here with the thought of the recently passed Act 197 on  my mind I checked with the water company and found that Hot Springs still had no added fluoride in the city water. Later I found that you can get a water report much like the one your city water company mails out annually, concerning the contents of the springs water here in Hot Springs as well, available from the Visitor Center downtown.  It turns out that each Springs is quite different, and after reviewing the information I decided that I preferred the cold spring at Happy Hollow. Mainly because while the springs do not have added fluoride, the hot springs do contain a measure of fluoride. I assume that it is naturally occurring, though I still don't want any. Thank you but, NO.

I now own four refillable 5 gallon jugs and a water dispenser that I keep stocked with Happy Hollow Spring water. I love the taste and I am so glad there is neither fluoride or any other added chemicals! Since I don't have a car sometimes I run out and am forced to use the city water. Because of this until recently I have cooked with the tap water. No more. Especially since I found out that heating the water actually makes the fluoride concentration HIGHER! Fluoride is a toxic waste byproduct of the phosphate mining industry. Back in 1940 something a great SCAM was perpetrated on the American people when in cahoots with the American Dental Association it was decided that dumping this stuff into our water supply might be a great way to get rid of it.

It is said to be a medicine, for the purpose of preventing cavities, which is hilarious since its main side effect is dental and bone fluorosis which is a weakening of the bone and tooth enamel first visible by white spots on the teeth. Under the 4th Amendment to the Constitution of the United States and the Nuremburg Code it is both illegal and immoral to medicate people without their express Informed Consent.

Since I have no personal power to do anything about it the best I can do right now is to diligently tell people about it, spread the word, and use Happy Hollow Spring Water in my cooking and for drinking. I hate that I have no choice but to shower and wash my clothes and dishes in the toxic stuff.

As a form of protest I would like to encourage Hot Springs National Park residents on city water to turn off their water on January 1st. If a significant number of city water customers refuse to purchase water for an entire day, the city will feel it. I plan to do it. I will turn off my ice maker, I will abstain from showering or washing dishes for just one day. I will make sure I have plenty of fresh Happy Hollow spring water available for drinking, cooking, and flushing the toilet. For one day we will practice not flushing unless necessary.

We can send a message to Hot Springs City Water with our water meters if we unite, for just one day!

Easy Gluten Free Oatmeal in the Rice Cooker- Bonus Two Recipes

Hey its nearly January, 2016! A brand new year and time for new things. So in that spirit I was looking through some recipes and organizing my calendar of activities coming up when it came to my attention that January is National Oatmeal Month! What better way to figure out what to cook then a prompt?

Well at first I thought oatmeal didn't sound all that exciting. Who wants another oatmeal recipe? Well then I remembered that... I do! So in addition to my usual cinnamon raisin version, Old Fashioned Cinnamon Raisin Gluten Free Oatmeal
 I came up with a brand new favorite, Cranberry Almond Oatmeal Crunch Gluten Free Oatmeal.

Seeing Double Chocolate Bar Cookies (GFCF)

Serves:24 - 36
 Prep:15 Min

Method:Bake

MIX TOGETHER DRY INGREDIENTS

1 c **glad flour or other gluten free flour mix
2/3 c + 2 tbsp buckwheat flour
1/2 Tbsp cinnamon
1/2 Tbsp nutmeg
3/4 tsp baking soda
1/4 tsp salt

CREAM TOGETHER

3/4 c organic coconut oil
1 c raw granulated sugar
1/2 c pure maple syrup
4 oz 4 squares unsweetened gfcf baking chocolate + 1 tbsp organic coconut oil melted over a double boiler
1 egg
1 tsp pure vanilla extract

STIR IN

12 oz gfcf chocolate chunks
1 c chopped pecans* optional


1 Preheat oven to 375 F - Cover a jelly roll pan or baking sheet (15x10x1) with foil or parchment, grease well with hard coconut oil.

2 Melt 4 squares of Unsweetened GFCF Baking Chocolate together with 1 Tbsp of Organic Coconut Oil over boiling water in a double boiler. If you must use a microwave, melt the chocolate first then add in coconut oil.

3 Mix flours, baking soda, salt and spices with a whisk util well blended and set aside.

4 Using an electric mixer, or stand mixer, cream together hard coconut oil and granulated sugar until light and fluffy. Drizzle in the melted chocolate mixture and blend, then add in maple syrup, egg, and vanilla and beat till well blended.

5 Gradually add flour mixture to the creamed mixture in the mixer, stirring between each addition. Be careful to keep the mixer speed low or you'll end up coating your kitchen with flour dust!

6 Stir In Chocolate Chunks and Pecans (if using)

7 Spread the dough into prepared pan, the dough will be stiff and sticky spread with a plastic spatula or large spoon and press firmly to make it an even thickness all over, pressing into corners and distributing chips and nuts evenly.

8 Bake for 15-18 minutes. Do not over bake. Let cool about 10 minutes and lift edges of foil to transfer to a cutting surface. Using a 3x8 Matrix cut into 24 bars or 4x9 for 36 bars.


A Note about Gluten and Casein Free Ingredients:

Since my family began this diet, we have discovered that you always have to read the labels on the foods you buy. This week when shopping I may buy something that is clearly gfcf and next week when I look for the same item I will notice they have changed the ingredient list adding dry milk, or maltodextrin, or some other questionable ingredient. I find that it's best to stick to unprocessed foods whenever possible- make it from scratch. My son is on the autism spectrum, its not the end of the world if he gets a little gluten or casein, while it may ruin his day, it isn't life threatening. I always watch him for symptoms and note the offending food. Please keep this in mind while selecting your ingredients for my GFCF recipes. Happy Careful Shopping! :)


I was making my GFCF Peanut Butter Chocolate Chunk Bar Cookies, when I discovered mid recipe (!!) I was out of Peanut Butter:( I had some Unsweetened Chocolate on hand so I went ahead and made an emergency adaptation. And the results were so "WOW"! (That's what the kids said :)
