I came up with a brand new favorite, Cranberry Almond Oatmeal Crunch Gluten Free Oatmeal.

Well, I have a little 6 cup rice cooker. I really love it, my son loves rice and as a family we tend to eat a 20 lb bag of Jasmine rice every month. I know... a LOT! But since its the only thing my son is allowed to use to cook for himself (we don't own a microwave) I started looking for different things he could cook in the rice cooker. I really need a bigger one, but that's another story.
I found that you can warm up nearly any leftovers in there the same way you might warm it on the stove in a pot. Then I started looking at cooking other grains and I came across one of my favorites... oatmeal! It is so so easy to cook oatmeal in the rice cooker. Basically you just throw in a cup of oatmeal and 2 cups water and turn it on. We only use organic certified gluten free oatmeal as part of our gluten free lifestyle but you can use whatever you like.
My family starts each day with a healthy smoothie so oatmeal for breakfast isn't a thing around here. But sometimes after dinner when I'm sitting up late and get a hankering for something warm and sweet, oatmeal fits the bill just right. Hey while I was writing this recipe post we had oatmeal for lunch! So, you know, just do what you like!
So here are the two recipes:
Cranberry Almond Oatmeal Crunch Gluten Free Oatmeal
2 Tbsp Chopped, Slivered, or Ground Certified Organic Almonds
small handful of Organic Dried Cranberries
1/2 tsp Ground Organic Cloves
pinch of Hain Iodized Sea Salt
2 cups Happy Hollow Spring Water
-OR-
Old Fashioned Cinnamon Raisin Gluten Free Oatmeal
small handful of Newman's Own Organics Organic Raisins
pinch of Iodized Sea Salt
2 cups Happy Hollow Spring Water
Directions:
Stir everything together and turn on the cooker. Thats easy, right?
Mine cooks for about 25 minutes and then shuts itself off. It sounds like toast popping when it's done so I just go watch another episode of whatever I happen to be binge watching on Netflix this week till I hear it pop.
At first glance when it pops it may look like its not done. There is a layer of water on top. Have no fear! Stir it up with a wooden spoon and you have 2-3 servings of perfectly cooked oatmeal.
I like to add some raw local honey or a spoonful of natural peanut butter, and some grass fed butter, ghee or coconut oil at this point, maybe top it off with a little coconut milk and yum yum! So satisfying on a cold night catching up on old seasons of The Walking Dead.
